How exactly does NASA take pictures of our own galaxy, and get a complete picture?

They don't.

All of the images of our galaxy are essentially just renderings based on our best estimates of the galaxy's appearance, as the milky way is estimated to be 100,000 light-years across, meaning that there is no way for us to get anything out far enough away to take a picture of the galaxy from the outside.

The furthest we've been able to travel is Voyager 1, and it's still up for debate whether or not it's made it to the edge of the solar system, let alone the galaxy.
