Lipids, also known as fats or oils, are located at the top or point of the pyramid (or more accurately, the triangle).

Triglycerides, which make up the majority of lipids—at least those that we eat—are composed of three long chain carboxylic acids (fatty acids) and a triple hydroxl alcohol (glycerol) that have joined forces in a triple condensation reaction that yields water as a byproduct.

Nevertheless, foods high in lipids are found at the top of the food pyramid, the smallest part, because they store long-term energy instead of short-term energy like carbohydrates. This means that consuming large amounts of lipids is not necessary and may even be harmful, leading to health issues like blood clotting and heart disease. These long fatty acid chains contain a large number of C-H bonds, which allows triglyceride molecules to store large amounts of chemical energy to be released in cellular respiration.
