The empty spaces between "small" clusters of galaxies is much greater than the space occupied by the matter itself.

It's better understood by the following claim that I once read:

The likelihood of any two massive objects colliding is comparable to releasing two flies into the Grand Canyon and expecting them to crash into each other if two galaxies were to collide and space through each other.

The estimated distance between neighboring galaxies is on the order of about 30 to 50 times the size of the galaxies themselves; however, this is an extremely approximate figure, as galaxies tend to exist in clusters, with vast spaces between clusters. This speaks more to the distance between stars than the galaxies themselves.
