The bolus, or ball of food, is propelled along the tract by the peristaltic wave, which is produced in the oesophagus by successive contractions of smooth muscle tissue. The movement includes

  1. Circular smooth muscle relaxation; 2) muscle contraction behind the bolus to stop it from moving backward; and 3) longitudinal contraction to move the bolus forward.
