Porosity: The size of a soil's pores greatly affects its capacity to hold water; fine-textured soils, such as clay loam, typically have smaller pores, whereas coarse-textured soils, such as sandy soil, have larger pores.

Structure: Soil consists of clusters called "peds" (fun fact: pedon is Greek for "soil," which explains the study of pedology). Soil's porosity is largely determined by its structure, as porosity can alter as a result of changes in structure. Soil's capacity to hold onto water or allow it to permeate is correlated with its structure, as is its capacity to hold onto essential nutrients (such as nitrogen or phosphorous). Peds are typically held together by organic matter.

Texture: Consider the differences between gravel and clay. Pour water over a bucket of gravel as opposed to a bucket of clay, and then consider the path that water must take to get to the bottom. Naturally, the gravel bucket will let water pass through the fastest because there are fewer pores inside the gravel particles as well as because there are fewer spaces between the particles. However, as weathering happens, larger particles break down into smaller ones, which can increase pore inter- and intra-soil storage and improve water/nutrient retention.
