CO stands for carbon monoxide.

Carbon dioxide, CO2, and carbon monoxide, CO, are the two oxides that are formed from carbon. Unlike carbon dioxide, carbon monoxide is toxic because it binds irreversibly to hemoglobin in blood, preventing the transport of oxygen and carbon dioxide during respiration.

When the supply of oxygen is limited, it is created when carbon-containing compounds, like hydrocarbons, do not burn completely.

Interesting about the bond between the C and O atoms is that it is made up of both a double and a dative covalent bond, which makes it equivalent to a triple covalent bond. Because of this, the bond is difficult to break, making CO stable and relatively unreactive.
